BEEF CUSTOM PROCESSING

Quarter, Half and Whole Beef Available

Raising beef requires farmers to be humane, safe, sustainable, and environmentally friendly. Once an animal arrives at Harry Hansen's, it is our duty to maintain the same level of care. 

We get back to the basics of meat processing with our custom cut beef. Just as Grandma and Grandpa, you have the opportunity to stock your freezer with locally-raised beef. Whether you purchase that beef directly from a farmer or you buy it directly through us (and we get it from a local farmer), custom cut beef is a great option for you and your family. 

Beef can be processed as a split-side (quarter), half, or whole. All custom beef is harvested at Hansen's state inspected facility. Beef carcasses dry-age for around 2-3 weeks. Meat is then cut to your specifications. We cyrovac the meat so the it lasts in your freezer. 

BEEF THROUGH HANSEN'S

Before purchasing Harry Hansen's, Rick was a full-time farmer - growing crops and raising cattle. With the help of their children, Tom, Tia, Richelle, and Kallie, Rick and Julie continue to maintain the farm while also operating Hansen's. Their herd of cows calve yearly, and the calves are raised to be harvested as custom beef. 

When you order a custom beef directly through Hansen's, you will either be receiving meat from one of Rick and Julie's own cattle or from another local farmer who provides the same high-quality care and quality of the cattle Rick and Julie raise. 

ORDERING A BEEF

When you decide to purchase a custom processed beef directly from Hansen's, you will want to give us a call as soon as possible. We currently have a waitlist for orders; therefore, we will simply need your name and phone number.

 

Once a beef is harvested to fill your order, we will call you to go through the custom processing instructions. If you decide when we call that you no longer want to order beef, we completely understand! Please let us know so we can move to others on the waitlist. 

CUSTOM INSTRUCTIONS

When an animal has been harvested and we are ready to fill your order, we will call you to go through the cutting instructions. Hansen's employees will walk you through how the beef can be cut and answer any questions you have. 

Before going through the instructions, feel free to check out the following information sheet regarding how the beef can be cut.

To reserve your order, we will need your credit card's number and expiration date to have on file. We will not charge your card unless you do not pick up your order. If you do not pick up your order within a month of it being completed, we will charge your card half of the total price and will re-sell the order. 

PROCESSED BEEF

A beef carcass hangs for around 2 to 3 weeks to allow the meat to age. This process makes the cuts more tender. 

We will start cutting the beef as soon as it is ready - using your specific custom cutting instructions. All cuts are cyrovaced. 

We can give you an estimated time frame of when your order will be ready, but please know this may change based on many variables. We will call you as soon as your order is ready. Please pick up your order within 10 days of receiving this phone call. 

When you pick up your order, you will need some sort of containers to put the meat in. We will bring it out on a cart and unload it in to the containers in the vehicle. We suggest the following number of laundry basket-sized containers for your order: split-side - 3, half - 6, whole - 8. 

PRICING FOR BEEF PURCHASED THROUGH HANSEN'S

When purchasing beef directly from Hansen's, the pricing includes the animal and processing. Please note, the total cost will vary depending on the size of the animal. Additional fees may apply if you want specialty items made. Please ask for pricing on these items when you place your order.

Unfortunately, we cannot lock in a price when you are put on our waiting list. Prices will vary based on the market price of cattle and are subject to change. We will tell you the current price when we call that the beef comes in. 

Split-Side (Quarter) Beef - Take home approximately 100-130 lbs. of beef

$4.30/Dressed Weight Lb. + $7.50 hide disposal fee

Approximate Total: $875 - $1,075

Half Beef - Take home approximately 210-250 lbs. of beef

$4.25/Dressed Weight Lb. + $15 hide disposal fee

Approximate Total: $1,600 - $1,850

Whole Beef - Take home approximately 420-500 lbs. of beef

$4.25/Dressed Weight Lb. + $30 hide disposal fee

Approximate Total: $3,200 - $3,700

BEEF FROM A FARMER

Farmers make appointments to bring beef to us to harvest for their customers. Farmers are responsible for all communication to the customer regarding the animal itself, including the price, size, order date, etc. Hansen's is responsible for contacting the customer to make sure the animal is processed to the customer's specific wants/needs and when meat is ready for pickup. 

Once an animal is delivered, the farmer will provide Hansen's with customers' names and phone numbers. Customers may either call Hansen's to go through cutting instructions, or Hansen's will call the customer for cuttings (depending on whichever occurs first). If you have free time, please feel free to call as soon as possible. This makes it easier for us to talk to you when you have time. 

PROCESSED BEEF

Hansen's employees will start cutting the beef as soon as it is ready - using your specific custom cutting instructions. All cuts are double-wrapped in freezer paper. 

We can give you an estimated time frame of when your order will be ready, but please know this may change based on many variables. We will call you as soon as your order is ready. Please pick up your order within 10 days of receiving this phone call. If it is not picked up within 17 days of your first phone call, we will begin charging a weekly storage fee of $20. If it is not picked up within 38 days of your first call, we will donate the beef to a local food bank.

When purchasing beef directly from a farmer, our pricing includes the processing. You will need to pay the farmer directly for the beef.

Split-Side (Quarter) Beef - Take home approximately 100-130 lbs. of beef

$1.11/Dressed Weight Lb. + $7.50 Hide Removal Fee

Approximate Total: $220 - $255

Half Beef - Take home approximately 200-250 lbs. of beef

$1.07/Dressed Weight Lb. + $15 Hide Removal Fee

Approximate Total: $420 - $480

Whole Beef - Take home approximately 400-500 lbs. of beef

$1.07/Dressed Weight Lb. + $30 Hide Removal Fee

Approximate Total: $840 - $960

Note: Animals that are made into all ground beef, have a dressed weight under 300 lbs per half, and/or are deemed older than 30 months by our WI State Inspector will receive an additional charge.
