Custom Cut Beef

Raising cattle requires farmers to be humane, safe, sustainable, and environmentally friendly. Once an animal arrives at Hansen's, it is our duty to maintain the same level of care. 

We get back to the basics with our custom cut beef processing. Just as Grandma and Grandpa did, you have the opportunity to stock your freezer with locally-raised beef. Whether you purchase that beef directly from a farmer or you buy directly from us (and we get it from a local farmer), custom cut beef is a great option for you and your family. 

Beef can be processed as a split-side (a quarter), half, or whole. All custom cut beef are harvested at Hansen's facilities. Their carcasses are allowed to age for at least 10 days. Meat is then cut to your specifications and double wrapped in freezer paper to last in your freezer for up to a year.

Process

Don't know a farmer? That's ok! We know plenty and are happy to bring animals in from them for you. Simply give us a call, and place your order. To place your order, we need to know: 

  • Your name

  • Your phone number

  • A credit card number and expiration date (We will not charge your card unless you do not pick up your order. If you do not pick up your order within a month of it being completed, we will charge your card half of the total price and will re-sell the order)

  • Your cutting instructions (click here to view an information sheet) Not sure about your cuts? No worries! Hansen's employees will walk you through them and answer any questions you may have. 

 

Once your order is placed, it will take about 2 weeks to bring that animal in. (Note: currently it may take around 4-5 months due to a higher volume of orders coming in).

A beef carcass hangs for 10 days to 3 weeks to allow the meat to age. This tenderizes the cuts. 

Hansen's employees will start cutting the beef as soon as it is ready - using your specific custom cutting instructions. All cuts are double-wrapped in freezer paper. 

We can give you an estimated time-frame of when your order will be ready, but please know it may change based on many variables. We will call you as soon as your order is ready. Please pick up your order within 10 days of receiving this phone call. 

When you pick up your order, you will need some sort of containers to put the meat in. We will bring it out in trays on a cart and unload it into the containers in the vehicle. We suggest the following number of laundry basket sized containers for your order: S/S - 2, half - 4, whole - 8.

When purchasing beef directly from Hansen's, the pricing includes the animal and processing. Additional fees may apply if you want specialty sausages made. Please ask for pricing on these items when you place your order.

When you order from a farmer...

Process

Farmers will make appointments to bring beef to us to harvest for their customers. Farmers are responsible for all communication to the customer regarding the animal itself. Hansen's is responsible for making sure the animal is processed to the customer's specific wants/needs. 

 

Once an animal is brought in, the farmer provides Hansen's with customers' names and numbers. Customers may either call Hansen's to go through cutting instructions, or Hansen's will call the customer (depending on whichever happens first). If you have free time, please feel free to call as soon as possible. This makes it easier for us to talk to you when you have time. 

 

Hansen's will go through your cutting instructions for that beef (click here to view an information sheet).  Not sure about your cuts? No worries! Hansen's employees will walk you through them and answer any questions you may have.

If it is not picked up within 38 days of your first phone call, we will donate the beef to a local food bank.

FAQs ABOUT ORDERING BEEF DIRECTLY FROM HANSEN'S

Does the beef contain antibiotics and/or hormones?


Beef is antibiotic and hormone-free.




Why is beef packaged in freezer paper?


Freezer paper has a moisture-resistant coating on one side. This barrier helps to seal in the beef's natural moisture while also keeping out oxygen and external moisture - two causes of meat becoming freezer burned or dried out. We use two layers of freezer paper - giving you extra protection from freezer burn and extending the shelf-life of your meat!




What's the best way to order a split-side, half or whole beef?

Do I need to have a downpayment when purchasing a quarter, half or whole beef?


No, you do not. We charge you once you pick up your meat. However, we do need a credit card on file in case you do not pick up your order within a month of it being done. In this scenario, we will charge you half the price of the beef.




Do I need to bring anything when I pick up my meat?


Please bring boxes, coolers, laundry baskets or other storage items to pick up your custom cut meat. Meat is brought out on trays to unload into your vehicle.
